Decision-Fatigue Cauliflower Tacos

I saw the most provocative question once. It went something like this: “If you had to choose between being skinny or being able to eat tacos forever…what kind of tacos would you choose?”

I don’t really have a lot of food obsessions, but is there anything more delicious, appealing, and equalizing than a good taco? They can be meat-filled, vegetarian, or vegan, and they go perfectly with  two of the most important food groups: margaritas and guacamole. Tacos are truly the  consummate politician of the food world: appealing to everyone and completely inoffensive.

I’m planning a wedding right now and I definitely have decision fatigue. I can’t decide one more thing. Last Sunday I went about 40 rounds on color schemes (just ask my poor sister!) and the last thing I wanted to decide on was what to eat for dinner.

Enter: Decision-Fatigue Cauliflower Tacos. Easy, quick, and delicious– even to my meat-eating fiancé!

Disclaimer that you have to have some Bitchin’ Sauce on hand to make these tacos, but if you don’t happen to have any you could substitute with some real cheese, like cotija or even feta– I included cotija on mine as an added bonus!

Ingredients (Serves 4-6) 

1 pack corn or flour tortillas

1 head cauliflower

1 can chickpeas

1 avocado

A few tablespoons of Bitchin’ Sauce 

Cotija cheese (optional!)

Olive oil

Salt & pepper

Directions 

Preheat oven to 400 degrees.

Chop up the cauliflower into bite-size pieces, drain and rinse can of chickpeas.

Combine chickpeas and cauliflower together, toss with 2 tablespoons of olive oil, salt and pepper. Roast for 20 minutes or until brown.

Assemble chickpea/cauliflower mixture onto tortillas, add chopped avocado, Bitchin Sauce, and Cotija cheese.
